Sweet Potato Hash with Onions and Feta

Cook Time: 25 minutes

Total Time: 35 minutes


Yield: Serves 4
Ingredients

Butter for pan
2 sweet potatoes, peeled and cut into cubes
3 yellow onions, sliced
2 tablespoons olive oil
kosher salt and freshly ground black pepper, to taste
1 tablespoon oregano
1/2-cup to 1-cup crumbled feta cheese

Instructions

Preheat oven to 450.
Butter a large baking pan or dish and set aside.
Add the chopped sweet potatoes, onions, and olive oil in a bowl and mix.
Season with salt, pepper, and oregano; mix together and place the sweet potatoes on prepared baking dish in a single layer.
Roast for 20 to 25 minutes, stirring once halfway through cooking, and cook until potatoes are fork tender.
Remove from oven and sprinkle with feta cheese.
Serve.
