Vegan Orange Chocolate Cake

Ingredients
    For the Vegan Chocolate Cake
  • 1 1/2 cup flour
  • 1 cup + tablespoons sugar
  • 6 tablespoons cocoa
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 cup water
  • 1/4 cup vegetable oil
  • 1 tablespoon white vinegar
  • 2 teaspoons vanilla
  • For the Vegan Orange Cake
  • 1 1/2 cup flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup orange juice
  • 1/3 cup vegetable oil
  • 1 tablespoon orange zest
  • 1 tablespoon white vinegar
  • 1 teaspoon vanilla
Instructions
  • Prepare each cake in separate bowls
  • For each cake
  • Combine the dry ingredients then stir in the wet ingredients.
  • Prepare two 8 inch round cake pans. Alternately add 1/4 cup of the cake mix into the cake pans creating the zebra effect. I stared and ended with chocolate. Bake at 350°F for 30 - 35 minutes.
  • Let cool in the pans for 10 minutes then flip them out onto a cooling rack.
  • Note
  • You can make each cake individually for one 8 inch cake. The chocolate cake may cook faster than the orange cake.
Orange-Basil Mojitos
Ingredients
  • 1 cup freshly squeezed orange juice
  • 1/2 cup thick simple syrup (see instructions)
  • 10 large fresh basil leaves, stems removed and discarded
  • 1 cup white rum
  • 1 cup club soda
  • Crushed ice
  • Orange slices, for garnish
  • Additional basil leaves for garnish
Instructions
  1. In a medium pitcher, combine the orange juice, simple syrup and basil. Use a wooden spoon or a muddler to crush the basil leaves in the bottom of the pitcher. Stir in the rum and club soda. Serve immediately in individual glasses over crushed ice. Garnish with orange slices and fresh basil.
  2. To prepare thick simple syrup, in a small saucepan, bring 1/2 cup water and 1/2 cup granulated white sugar to a boil. Reduce the heat to low and simmer, stirring the mixture until the sugar has dissolved. Remove the pan from heat and let cool.

Green apple martini

Ingredients:

  • 1 1/2 ounces vodka
  • 1 ounce green apple schnapps
  • 1/4 ounce lemon juice

Preparation:

  1. Pour the ingredients into a cocktail shaker with ice cubes.
  2. Shake well.
  3. Strain into a chilled cocktail glass.
